This is controlled by Default Messaging (CMIME). To change this, follow the below steps:

For BlackBerry® Device Software 6.0

- Options > Device > Advanced System Settings > Default Services

For BlackBerry® Device Software 5.0

- Options > Advanced Options > Default Services
